So... you gave me an idea for french toast for the hub - and he absolutely loves it. He actually waited all day today to eat so that I would make it for him again!

I changed it up a bit

-3 eggs
-3 pieces 21 grain bread
-2 tomatoes
-1 avocado
-about 1 tbsp spicy dijon mustard
-about 1/2 cup colby jack cheese, shredded
-1/4 white onion
-spices: basil, salt, black pepper, cayenne pepper, garlic powder, onion powder

all the spices and cheese went in with the eggs - and I didn't add any milk so it would be a thicker mix. what was left in the bowl, I poured over the toast as soon as I put it in the pan. the tomato and avocado went on top (sliced) and then the mustard.

Heh, it's a new breakfast staple in our house - and it's really quick! (and a lot better than having it soaked in sugar and syrup!)

Hmm..i have everything but the spicy dijon mustard.
I'll have to try this sometime, my fella has been getting bored of my Texas french toast every other morning.

Actually most if not all of those food items are in my diet...

There are such things as 'good' fats ya know.
Not saying you should eat them in large amounts or anything, just that it's still a pretty healthy meal.

It sounds yum, except the avocado. I'm not fond on the texture.

You would most definitely not approve of the corn muffins that I just made. Muahaha! They smelled so yummy, while they were baking, my toddler was sitting in front of the oven, sobbing for the 'cookies' in it.

Sounds like my kind of meal.

I made this one last Sunday:

Get some Portabello mushrooms. These are the monster size ones.
Some Sour Dough bread and one lemon.

Cook the sliced mushrooms in butter first and then olive oil.
As it cooks, grate some zest on top and mix in.

Toast the bread slices and when finished, put the mushroom on top.
If you did the zest part correctly, you should have a bit of a lemon zing to it.

Oh that sounds good. (Bump by the way) Not sure about the avocado though... I only have that in salads and things.

I make this awesome toast thinger called Welsh Rarebit - ingredients:

For two people:


1 or 2 eggs (beaten)
3 chopped tomatoes
1 chopped spring onion
handful of cheddar cheese or other nice melty cheese.
As many slices of bread as you need for the ingredients
Dash of Worchestershire sauce if you have it... mmm

Mix all ingredients and spread onto slices of white or brown bread, grill until the egg is set and toast is slightly brown around edges.

YUMMMMMMMMMMMMM!!
